BAKED SWEET AND SOUR CHICKEN





To make baked sweet and sour chicken, you’ll need the following ingredients:

Ingredients:

– 1 ½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
– ½ cup all-purpose flour
– ¼ cup cornstarch
– 1 teaspoon salt
– ½ teaspoon black pepper
– 2 eggs, beaten
– Cooking spray

For the Sweet and Sour Sauce:

– 1 cup pineapple juice
– ¼ cup rice vinegar
– ¼ cup ketchup
– 2 tablespoons soy sauce
– ½ cup brown sugar
– 1 teaspoon garlic powder
– 1 teaspoon ginger powder
– 2 tablespoons cornstarch
– ¼ cup water

For the Vegetable Stir-fry (optional):

– 1 bell pepper, cut into chunks
– 1 onion, cut into chunks
– 1 cup pineapple chunks
– 1 carrot, sliced
– 1 cup snow peas
– 2 cloves garlic, minced
– 1 tablespoon vegetable oil

 

Instructions:

1. Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with cooking spray.

2. In a shallow dish, combine the all-purpose flour, cornstarch, salt, and black pepper. Dip each piece of chicken into the beaten eggs, then coat it in the flour mixture. Place the coated chicken pieces on the prepared baking sheet.

3. Bake the chicken in the preheated oven for about 20 minutes or until it’s cooked through and crispy. Flip the chicken halfway through the cooking time to ensure even browning.

4. While the chicken is baking, prepare the sweet and sour sauce. In a saucepan, combine the pineapple juice, rice vinegar, ketchup, soy sauce, brown sugar, garlic powder, and ginger powder. Bring the mixture to a simmer over medium heat.

5. In a small bowl, whisk together the cornstarch and water until smooth. Gradually add the cornstarch mixture to the saucepan while whisking constantly. Continue cooking for another 2-3 minutes until the sauce thickens. Remove from heat.

6. If you want to make a vegetable stir-fry to serve with the chicken, heat the vegetable oil in a separate pan over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the bell pepper, onion, pineapple chunks, carrot, and snow peas. Cook for 5-7 minutes until the vegetables are tender-crisp.

7. Once the chicken is done baking, transfer it to a large bowl and pour the sweet and sour sauce over it. Toss to coat the chicken evenly.

8. Serve the baked sweet and sour chicken with the vegetable stir-fry if desired, and you can also serve it with steamed rice or noodles.
