Turkish bread, also known as “pide” or “Turkish pide,” is a traditional bread that originated in Turkey and is popular in many Middle Eastern and Mediterranean countries. It is a versatile bread with a unique texture and flavor, making it a staple in Turkish cuisine.
Ingredients:
For the dough:
- 4 cups all-purpose flour
- 1 teaspoon instant yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 1/2 cups warm water
For the topping (optional):
- Sesame seeds or nigella seeds
Instructions:
- In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well.
- Add the olive oil to the warm water and pour it gradually into the flour mixture. Stir the mixture with a wooden spoon or your hands until it comes together into a sticky dough.
- Transfer the dough onto a floured surface and knead it for about 8-10 minutes until it becomes smooth and elastic. Add more flour if needed to prevent sticking, but be careful not to add too much.
- Shape the dough into a ball and place it in a greased bowl. Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm place for about 1-2 hours, or until it doubles in size.
- Preheat your oven to 450°F (230°C) and place a baking stone or an inverted baking sheet inside to heat up.
- Once the dough has risen, punch it down to release the air. Transfer it onto a lightly floured surface and divide it into two equal portions.
- Take one portion of the dough and shape it into a round or oval shape, about 1/2 inch (1 cm) thick. Repeat the same with the second portion.
- Place the shaped dough onto a baking sheet lined with parchment paper or a pizza peel dusted with flour or cornmeal.
- If desired, you can create decorative patterns on the surface of the bread by gently pressing your fingertips into the dough.
- Optional: Brush the surface of the bread with water and sprinkle sesame seeds or nigella seeds on top.
- Carefully transfer the baking sheet or the prepared bread onto the preheated baking stone or inverted baking sheet in the oven.
- Bake the bread for about 15-20 minutes or until it turns golden brown and sounds hollow when tapped on the bottom.
- Remove the bread from the oven and let it cool on a wire rack before slicing and serving.
