Best Ever Chicken Salad 🥗🐔
Creamy, flavorful, and loaded with tender chicken, this chicken salad is perfect for sandwiches, wraps, or as a light and refreshing main dish.
Prep Time: 15 minutes | Cook Time: 10 minutes (if cooking chicken) | Servings: 4
Ingredients:
- 2 cups cooked chicken, shredded or diced (rotisserie or poached works well)
- ½ cup mayonnaise
- 2 tablespoons sour cream (optional, for extra creaminess)
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 2 celery stalks, finely chopped
- ¼ cup red onion, finely diced
- ½ cup grapes, halved (optional, for a touch of sweetness)
- ¼ cup slivered almonds or chopped pecans (optional, for crunch)
- 2 tablespoons fresh parsley, chopped
- Salt and pepper, to taste
Directions:
- Prepare the dressing 🌟
In a large mixing bowl, whisk together mayonnaise, sour cream (if using), Dijon mustard, and lemon juice until smooth. Season with a pinch of salt and pepper. - Mix the ingredients 🥗
Add the cooked chicken, celery, red onion, grapes, almonds (if using), and parsley to the bowl. Gently toss to combine, ensuring the chicken is well-coated in the dressing. - Adjust seasoning and chill ❄️
Taste and adjust seasoning with more salt and pepper if needed. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. - Serve and enjoy 🍴
Serve chilled on sandwiches, in wraps, over a bed of greens, or with crackers.
Chef’s Tip: For an herbaceous twist, add chopped dill or tarragon to the salad. Leftover roasted chicken works wonderfully for this recipe!
