Country Ranch Green Beans ‘n Potatoes with Bacon 🥔🥓

Ingredients:
- 1 lb fresh green beans, trimmed
- 1 lb baby potatoes, halved (or quartered if large)
- 6 slices bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 packet (1 oz) ranch seasoning mix
- ½ teaspoon black pepper
- Salt, to taste
- 1 tablespoon chopped parsley (optional, for garnish)
Directions:
- Cook the bacon 🥓
Heat a large skillet or Dutch oven over medium heat. Add chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the skillet. - Sauté the aromatics 🌟
Add the diced onion and garlic to the bacon drippings. Cook for 2-3 minutes, stirring frequently, until softened and fragrant. - Cook the potatoes and green beans 🥔
Add the halved baby potatoes to the skillet, stirring to coat them in the drippings. Cook for 5 minutes, then add the green beans. Drizzle with olive oil, sprinkle the ranch seasoning mix and black pepper over the top, and stir to combine. - Simmer until tender 🍲
Reduce the heat to medium-low and cover the skillet with a lid. Cook for 12-15 minutes, stirring occasionally, until the potatoes are fork-tender and the green beans are cooked to your desired doneness. Add a splash of water if the pan gets too dry. - Combine and serve 🍽️
Stir the cooked bacon back into the skillet and toss everything to combine. Adjust seasoning with additional salt if needed. Garnish with parsley before serving, if desired.
