Snowball Cookies
Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar (plus extra for coating)
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 cup finely chopped pecans or walnuts (optional)
- 1/4 tsp salt
Instructions
- Preheat the Oven:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. - Cream Butter and Sugar:
In a large mixing bowl, beat the softened butter and powdered sugar until light and fluffy. Mix in the vanilla extract. - Mix Dry Ingredients:
Gradually add the flour and salt to the butter mixture, mixing until combined. If using nuts, fold them into the dough. The dough will be crumbly but should hold together when pressed. - Shape the Cookies:
Roll small portions of the dough into 1-inch balls and place them on the prepared baking sheet about 1 inch apart. - Bake:
Bake in the preheated oven for 10–12 minutes, or until the bottoms are lightly golden. The cookies should remain pale on top. - Coat in Powdered Sugar:
Allow the cookies to cool for 5 minutes on the baking sheet. While still warm, roll each cookie in powdered sugar to coat. Place on a wire rack to cool completely. - Double-Coat:
Once the cookies are fully cooled, roll them in powdered sugar again for a thick, snowy coating.
Storage Tip: Store in an airtight container at room temperature for up to 1 week.
