VEGETABLE BEEF NOODLE SOUP





To make vegetable beef noodle soup, you’ll need the following ingredients:

Ingredients:

– 1 pound beef stew meat, cut into small pieces
– 1 tablespoon vegetable oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 4 cups beef broth
– 2 cups water
– 1 can diced tomatoes (14 ounces)
– 2 carrots, sliced
– 2 celery stalks, sliced
– 1 teaspoon dried thyme
– 1 bay leaf
– Salt and pepper to taste
– 2 cups egg noodles
– 2 cups frozen mixed vegetables
– Fresh parsley, chopped (for garnish, optional)

Instructions:

1. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set it aside.

2. In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant.

3. Return the browned beef stew meat to the pot. Add the beef broth, water, diced tomatoes (including the juice), sliced carrots, sliced celery, dried thyme, bay leaf, salt, and pepper. Stir well to combine.

4. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 1 hour to allow the flavors to meld together and the beef to become tender.

5. After the soup has simmered for 1 hour, add the egg noodles and frozen mixed vegetables. Stir well and continue cooking for another 8-10 minutes, or until the noodles are tender.

6. Taste the soup and adjust the seasoning with salt and pepper if needed.

7. Once the noodles are cooked and the vegetables are tender, remove the pot from the heat.

8. Ladle the vegetable beef noodle soup into bowls. Garnish with fresh chopped parsley if desired.

9. Serve the soup hot and enjoy!
