Classic Fried Chicken 

Ingredients

  • 1 whole chicken (cut into pieces)
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp cayenne pepper (optional, for heat)
  • 2 cups buttermilk
  • 2 large eggs
  • Cooking oil (vegetable, canola, or peanut oil) for frying

Instructions

  1. Prepare the Chicken:
    Pat your chicken pieces dry with a paper towel. This helps the coating stick better.
  2. Season the Flour:
    In a large shallow dish, mix the flour, salt, black pepper, garlic powder, paprika, and cayenne (if using).
  3. Mix the Buttermilk Batter:
    In another bowl, whisk together the buttermilk and eggs until well combined.
  4. Coat the Chicken:
    Dip each piece of chicken in the seasoned flour, ensuring it’s coated thoroughly. Then, dunk it into the buttermilk mixture, letting any excess drip off. Finally, give it one more coating in the flour mixture. Gently shake off any extra flour.
  5. Heat the Oil:
    Pour enough oil into a deep skillet or fryer to reach about halfway up the chicken pieces. Heat the oil to 350°F (175°C).
  6. Fry the Chicken:
    Carefully place the chicken pieces into the hot oil, skin-side down, without overcrowding the pan. Fry in batches if necessary. Cook for 10–12 minutes per side, or until the chicken is golden brown and the internal temperature reaches 165°F (75°C).
  7. Drain and Rest:
    Transfer the fried chicken to a plate lined with paper towels to drain excess oil. Let it rest for a few minutes before serving.
