Turkish bread, also known as “pide” or “Turkish pide,” is a traditional bread that originated in Turkey and is popular in many Middle Eastern and Mediterranean countries. It is a versatile bread with a unique texture and flavor, making it a staple in Turkish cuisine.

Ingredients:

For the dough:

  • 4 cups all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 1/2 cups warm water

For the topping (optional):

  • Sesame seeds or nigella seeds

Instructions:

  1. In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well.
  2. Add the olive oil to the warm water and pour it gradually into the flour mixture. Stir the mixture with a wooden spoon or your hands until it comes together into a sticky dough.
  3. Transfer the dough onto a floured surface and knead it for about 8-10 minutes until it becomes smooth and elastic. Add more flour if needed to prevent sticking, but be careful not to add too much.
  4. Shape the dough into a ball and place it in a greased bowl. Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm place for about 1-2 hours, or until it doubles in size.
  5. Preheat your oven to 450°F (230°C) and place a baking stone or an inverted baking sheet inside to heat up.
  6. Once the dough has risen, punch it down to release the air. Transfer it onto a lightly floured surface and divide it into two equal portions.
  7. Take one portion of the dough and shape it into a round or oval shape, about 1/2 inch (1 cm) thick. Repeat the same with the second portion.
  8. Place the shaped dough onto a baking sheet lined with parchment paper or a pizza peel dusted with flour or cornmeal.
  9. If desired, you can create decorative patterns on the surface of the bread by gently pressing your fingertips into the dough.
  10. Optional: Brush the surface of the bread with water and sprinkle sesame seeds or nigella seeds on top.
  11. Carefully transfer the baking sheet or the prepared bread onto the preheated baking stone or inverted baking sheet in the oven.
  12. Bake the bread for about 15-20 minutes or until it turns golden brown and sounds hollow when tapped on the bottom.
  13. Remove the bread from the oven and let it cool on a wire rack before slicing and serving.

Turkish bread is best enjoyed fresh, either as a side to dips and spreads or as a base for sandwiches and kebabs. Enjoy!
