You can use peeled peaches or unpeeled peaches, it’s personal preference. They soften while cooking. To properly peel peaches, add the peaches to boiling water for 10-20 seconds to loosen the skins, then place them in an ice bath to stop the cooking process. Once cool, use a paring knife and gently peel away the skin, which should peel off easily.
