This casserole is great to take to any meal or holiday event. If your family and friends love potatoes, they will love this dish. My family likes potatoes & I’m looking for new methods to make them when we get together. I recently made these for Labor Day weekend cookouts and went too big You can double this recipe or cut it in half for a few people. * Ingredients :
° 5 pounds Yukon Gold potatoes, baked
° ½ teaspoon kosher salt
° 1/2 teaspoon ground black pepper
° 2 lbs thick, cooked, shredded bacon
° 2 c sour cream
° 2 shredded mozzarella cheese
° 2 grated cheddar cheese
° 4 chopped green onions
° 1 squeeze bottle
* Instructions :
Pour sour cream into a squeeze bottle.
Preheat oven to 350 degrees and grease a 9 x 13 baking tray with cooking spray, set aside.
Cut the baked potatoes into small pieces.
Lay half of the sliced ​​potato on the bottom layer of a baking tray, and sprinkle with salt and pepper.
Add half of the cooked bacon to the top of the potatoes.
Sprinkle sour cream over the bacon, it won’t cover it completely, and that’s okay.
Sprinkling half of cheddar cheese and mozzarella cheese on the potato casserole.
Put the last layer of potatoes on top of a little cheese.
Sprinkling rest of bacon and sprinkling sour cream on top.
Sprinkling rest of cheese on green onions.
Cover with tin foil, put in the oven and bake for 30 minutes
Remove the potato casserole from the oven, let it cool slightly and serve it hot
