Better Than Take-Out Fried Rice





This rice is BETTER than P.F. Changs!

Even if you are fortunate enough to grow up with a talented cook, you can still fall prey to some limiting food myths. Here are two that Mom gave me: (1) Good Chinese food is way too complicated and impractical to make at home. (2) It is extremely difficult, if not impossible, to prepare a really good and really healthy dish. This recipe goes a long way to dispel these notions.

To be clear: I don’t plan to give up on all of this unless it is healthy things. I will always love my bacon and I still believe that butter makes a lot of difference. But I believe in maintaining a balanced diet and mixing healthier options when possible, and I love the variety.

The plate of fried rice allows me to slaughter all these proverbial birds with a stone. It offers a healthy sample of the best carbs and is low in fat, much better than regular Chinese takeout, and it gives me a bit of a break from the daily food options for home cooking without breaking the bank.

For me, fried rice is very forgiving. I usually get white rice with my Chinese or Asian dishes, but from time to time I get this rice stuffed with tasty vegetables with my main dish and it’s incredibly good! I recently discovered that I can do this garbage at home! You don’t need a wok or a large flat grill like those in the restaurant.

A simple pan will do. I also like to add chicken or beef to the mix. This way you can call this fried rice a full meal. Hurray!

My family never complains when I make fried rice. We have eaten fried rice with shrimp, chicken and pork since the discovery of my recipe. Can you imagine my excitement when I saw fried rice with Thai flavor!

To make this recipe, you will need the following ingredients:

Thai food is super tasty and it’s one that I can’t stop eating until I feel stuffed like a Thanksgiving turkey. Speaking of turkey, you’ll soon have leftovers and white meat would be perfect on this plate, I’m just saying! We had leftovers of this delicious fried rice and took them to my grandfather’s.

They loved it! That says a lot about the quality of this rice, because my grandparents are old school and generally don’t eat foods like fried rice.
I really couldn’t believe how well it went. I promise you can stay at home and enjoy it better than having fried chicken rice.
4 tbsp rice, cooked
1/2 pound boneless chicken breast, cooked and cut into small pieces. or the same amount of medium sized cooked shrimp.
1 cup frozen peas and carrots
1 chopped white onion
2 garlic cloves, minced
2 eggs
3 tablespoons sesame oil
1/4 tsp soy sauce
1 Prepare the rice according to the directions on the package to make 4 cups of cooked rice.
2 Heat the sesame oil in a large skillet over medium heat. Add the onion, garlic, peas and carrots. Stir until tender.
3 Break the eggs in the pan and stir, mixing with the vegetables.
4 Add the rice, chicken or shrimp, or both, and the soy sauce to the pan. Stir to combine all ingredients and remove from heat. Take advantage!
