BAKED GARLIC PARMESAN POTATO WEDGES





This easy recipe of baked parmesan and garlic potatoes will amaze you with its simplicity and fantastic flavor! These are an excellent side dish or a party aperitif!

French fries are my weakness. Several times, my higher metabolism and my younger brother made midnight fries at local Wendy’s / Carls Junior / Mickey-Ds which is open at this unpleasant hour. I tried to control my addiction to adulthood by ordering potato chips only here and there when I went out to eat, instead of following the motto of potato chips with everything I have supported for 20 years.

When my brothers and I went to iHop for breakfast, I ordered chicken strips and fries. The pancakes are great, but they can’t beat fries and ketchup.

These days, as I said, I try to order fries less often, for obvious health reasons. Many times, I only share with the husband, it does not bother him to give up. Or 60%. It’s amazing like that.

And when I feel like having a variety of fries while I’m at home with my hoodie, I usually do mine instead of going for an order.

“A medium potato, please.”

“Yes, that will be it.”

INGREDIENTS

3-4 large red potatoes, sliced
4 tablespoons olive oil
2 teaspoons of salt
2 teaspoons garlic powder
2 teaspoons Italian seasoning
½ cup grated parmesan
optional: fresh parsley (or coriander), ranch dressing or blue cheese for dipping

INSTRUCTIONS:

Preheat the oven to 375 degrees. Lightly grease a large baking sheet and set aside.
Place the potato slices in a large bowl. Drizzle with olive oil and stir to coat. In a small bowl, combine the salt, garlic powder and Italian seasoning. Sprinkle grated cheese over potato slices, toss to coat, then sprinkle with seasoning mixture.
Place the potato slices on a baking sheet prepared in a single layer, skin side down. Bake 25 to 35 minutes until the potatoes are tender and golden. Sprinkle with freshly chopped parsley and vinaigrette.
